How to Make Zucchini Boats

Hey friends, KJ Simpson and Mandy here. Today we will be making a low carb appetizer using zucchini–zucchini boats!
Some quick facts about zucchinis are as follows: The darker the skin, the better. So zucchinis that are dark green, the better they are for your health. One zucchini has only 25 calories! Also zucchinis also taste great grilled! Adding zucchini to your diet is another way to get your daily required intake of veggies!

Prep Time: 15 minutes Cook Time: 15 minutes Servings: 12 boats, about 6 servings
6 small zucchini
1 Tbsp. olive oil
1 clove garlic, finely minced
Salt and freshly ground black pepper
1 cup marinara sauce
1 1/2 cups shredded mozzarella cheese
1/3 cup finely shredded parmesan cheese
1/2 cup mini turkey pepperoni slices
2 Tbsp. chopped fresh oregano
Preheat oven to 400 degrees.
Line a large rimmed baking sheet with parchment paper or a Silpat liner, set aside.
Cut each zucchini into halves through the length (if they don’t lie flat trim a thin portion from bottoms so that they will lie mostly flat. I only had to do this with one of them).
Pat insides dry with paper towels (cut portion). Align on prepared baking sheet.
In a bowl, stir together olive oil and garlic then brush lightly over tops of zucchini.
Sprinkle with salt and pepper to taste then brush a slightly heaping 1 Tbsp. marinara sauce over each zucchini, leaving a small rim near edges uncoated.
Sprinkle tops evenly with mozzarella cheese then with parmesan cheese.
Top with pepperoni slices (placing them more near centers as the cheese will melt and spread).
Bake in preheated oven 12 – 18 minutes (bake time will vary depending on how thick your zucchini are and how crisp/tender you want them).
Remove from oven and sprinkle with chopped fresh oregano. Serve warm.

- Hey friends, KJ Simpson here. Welcome to the all inclusive lifestyles show. I have a special guest here. Her name is Dr. Mandy. It's Mandy in the kitchen. And we are going to be doing something with this little green thing. This little green thing, by the way, obviously it's a zucchini. We call this a zucchina, not a zucchini, because it's just one. But we're gonna actually be dealing with lots of these because we're making zuke boats. Zucchini boats, I believe today. Is that right? - Yes. - So, zucchini boats, I would assume it's a good appetizer. Is that where you would serve these zucchini boats? - Yes, zucchini boats are great for holiday parties, or as appetizers. So, yes, they're very quick and simple to make, and they only take about 18 minutes to prepare. And, they're very tasty. - Thinly slicing the zucchini. I think you get about three slices off of one zucchini, and this is essentially gonna be the boat. And we're gonna fill this boat up with some tasty ingredients, I believe. What are we actually gonna be putting into these boats? - So, first we're gonna top the boats with sauce, followed by some cheese, and then some turkey pepperoni, and some olives. Now, you can also top these with whatever you'd like. If, you know, you'd like peppers on them, or if you want more of a pesto sauce, or anything like that, you can. But today we're gonna make it more of a vegetarian type of zucchini boat. So, once we top the zucchini in slices like this, then we're going to put them onto a baking sheet. First you wanna spray the baking sheet with Pam, or another cooking spray, and then your're going to lay the tray with zucchini boats, and then top them as you wish. - So, some quick facts about zucchinis here. The darker the skin, the better. So you want a really, really dark green. You know, just like with a lot vegetables, the more color that they have to them, that's expressing that they have a lot more nutrition in them.
